Zrazy with cabbage - general principles

Zrazy with cabbage is cooked by frying the prepared products in a pan or baking them in the oven. Adherents of good nutrition can cook zrazy for a couple.

Zrazy with cabbage is notable for the fact that their main ingredient - cabbage - can be either a filling or the cutlet itself.

If the cabbage is included in the forcemeat, it is finely chopped, mashed thoroughly with hands, salted, seasoned with spices, slightly fried (you can skip this step), mixed with egg, flour. You can experiment and add twisted previously slightly fried meat, mushrooms, mashed potatoes. In this case, as a filling, champignons fried with onions and minced meat with vegetables are delicious.

If cabbage is used as a filler, then either fresh or pickled product is taken. Cabbage is also chopped, salted, pepper, fried. When frying, you can add a variety of vegetables, herbs. An excellent basis for such a filling will be any meat, mushroom, vegetable, bean mince.

1. Potato zrazy with cabbage

Ingredients:

• potatoes - 6 medium tubers;

• cooking oil - half a glass;

• salt, black pepper - 15 g each;

• crushed crackers - 150 g;

• mayonnaise low in calories - 50 g.

Filling:

• 1 carrot;

• onion head;

• a slice of fresh cabbage;

• black pepper, salt - 15 g each

Cooking method:

1. Peel the boiled potatoes in a peel, mashed in mashed potatoes, salt, pepper, cool.

2. Prepare the filling: peeled carrots and onions, cut into cubes, cabbage - into strips.

3. All vegetables are laid out in a pan with heated oil and fry for 20 minutes, salt, pepper, mix well.

4. From the mashed potatoes we make small balls.

5. From each ball we make a thin cake, put a little filling on top and form a pie.

6. Bread zrazy in ground breadcrumbs, fry in oil over low heat until golden brown.

7. When serving, put zrazy on portioned plates, pour them with your favorite sauce.

2. Zrazy with sour cabbage from beans

Ingredients:

• colored dry beans - 400 g;

• sauerkraut - a small handful;

• black pepper, salt - 20 g each;

• cooking oil - half a glass;

• ground crackers - 2 handfuls.

Cooking method:

1. Wash the beans, soak in warm water for 2 hours. Boiled soaked beans in other water for about an hour.

2. Stew the cabbage for several minutes with a small amount of water and oil, add salt and pepper.

3. Slightly cooled beans, grind in a blender to a puree state, add salt, pepper, mix well.

4. Put a small amount of mashed beans on the palm of your hand, make a cake out of it, spread the stewed sauerkraut on top, fold the edges of the cake together, forming zrazy in the form of a log.

5. Bread each prepared product in breadcrumbs and fry in a pan with oil until a light brown crust is on both sides.

6. When serving, put on a flat plate, pour tomato ketchup.

3. Zrazy with cabbage and mushrooms

Ingredients:

• white bread - a little less than half a loaf;

• fresh champignons - 4 pcs.;

• a small piece of white cabbage;

• milk - 150 ml;

• sour cream - 150 g;

• a piece of butter;

• flour - 1 handful;

• onion head;

• 1 egg;

• breadcrumbs - 2 handfuls;

• salt - 10 g.

Cooking method:

1. Fresh mushrooms, clean, wash, fill with water and boil.

2. Throw the cooked mushrooms into a colander, cool, grind with a blender.

3. We cut the cabbage in strips, salt, put it in a cast iron, pour oil, half a glass of water and simmer in a quiet flame.

4. Onion cut into strips, fry in a pan in a small amount of oil until slightly brown.

5. Mix the stewed cabbage with onions, ground mushrooms, mix well.

6. Soak slices of bread in hot milk, cool and spread in the resulting minced meat.

7. Forcemeat wipe through a sieve.

8. Finely chop the boiled egg with a knife and add to the minced meat along with a piece of butter, flour, add salt, and mix everything thoroughly.

9. From the resulting meat, make zrazy, bread in breadcrumbs and fry a little on both sides in oil.

10. Lubricate the baking sheet with oil, sprinkle with breadcrumbs and spread the fried zrazy, pour sour cream diluted with water, put in a preheated oven, bake for about 10 minutes.

11. Serve on the plates a few pieces, pouring the sauce in which the zrazy was baked, sprinkle with chopped parsley.

4. Meat zrazy with cabbage in sauce

Ingredients:

For minced meat:

• kilogram of any stuffing;

• 1 egg;

• 20 g of black pepper and salt;

• 1 onion.

Filling:

• a small slice of fresh cabbage;

• 2 eggs;

• 2 onion heads;

• a little oil for frying;

• salt - 30 g.

Sauce:

• tomato - 50 g;

• 1 pod of bell pepper;

• 1 carrot;

• onion head;

• sunflower oil - half a glass.

Cooking method:

1. Grind minced meat again through a meat grinder along with the onion head.

2. In the minced meat, break the egg, add salt, pepper, stir well.

3. For the filling, shred the cabbage with straws, simmer in a cast iron with oil and water for 10 minutes. Add the onion, chopped into small crumbs, and simmer for a few more minutes. Put the prepared cabbage with onions on a plate, cool.

4. Boil the eggs, remove the shell, finely chop and put in the cabbage, stir well.

5. Sprinkle flour on a wooden board, put small meat balls on it, make cakes out of them.

6. On the cakes we spread a little cabbage filling and glue the edges of the cakes, forming zrazy in the form of small cutlets.

7. Sprinkle the formed zrazy with flour, put it on a hot pan and fry in oil until golden brown on all sides.

8. Prepare the sauce: in another pan, fry for several minutes with the addition of sunflower oil, onions and carrots, sweet peppers, chopped into strips, add the tomato and slightly warm.

9. We transfer vegetables with tomato in a pan to zrazy, pepper, add salt, add 2 cups of unboiled water, simmer for half an hour in a quiet flame.

10. Pour the chopped greens of dill.

11. We serve meat zrazy with cabbage on plates of 2 pieces each, spread boiled rice next to it, pour over the sauce.

5. Chops zrazy with cabbage

Ingredients:

• a small piece of beef meat;

• sauerkraut - 2 handfuls;

• lard with a layer - a small piece;

• onion head;

• 1 carrot;

• 1 tomato;

• some sunflower oil;

• mustard sauce - 50 ml;

• ground crackers, flour - a pinch;

• butter and ghee - 30 g each;

• tomato - 30 g;

• half a bunch of dill and parsley;

• a pinch of salt and black pepper.

Cooking method:

1. Peel the onion, cut into strips, fry in ghee until light brown.

2. Pork fat is cut into a small cube, carrots - on a grater.

3. Tomato, put in boiling water for 10 minutes, peel, cut into small slices and fry in a pan with oil and tomato paste.

4. Put the sauerkraut in a pan and simmer in a small amount of oil and water.

5. Pour flour and crackers into another pan, fry with a piece of butter until slightly brown.

6. A piece of my beef, cut with medium plates and beat off with a hammer on both sides.

7. Coat prepared meat pieces with mustard sauce, put a piece of bacon, a little fried onion, sauerkraut on top, wrap the edges in the form of a roll and fasten with a toothpick.

8. Formed zrazy fry in a pan with oil until a slightly brown crust.

9. Pour zrazy with a glass of water, lay carrots, roasted tomato, flour with breadcrumbs, add salt, pepper and simmer until the meat is softened.

10. Serve on a flat plate, sprinkled with dill and parsley.

6. Budget zrazy with cabbage and bread

Ingredients:

• half a kilogram of fresh cabbage;

• bread - a small piece;

• onion head;

• water - 150 ml;

• flour - 3 handfuls.

Cooking method:

1. Chop the cabbage into strips, salt, simmer until softened with vegetable oil and water.

2. Onion cut into small crumbs, fry a little in oil and mix with cabbage.

3. Soak the bread in boiling water, cool and put in the cabbage, pepper, add salt, pour the flour, stir everything thoroughly.

4. From the resulting meat, make zrazy, roll them in flour, fry in a pan with oil on all sides for several minutes.

5. Serve on plates of 3 pieces, pouring tomato sauce, next to it you can put pieces of fried meat.

Zrazy with cabbage - subtleties and useful tips

• Zrazy with cabbage will have a delicious, ruddy, crispy crust if they are breaded in breadcrumbs, cereal or flour before frying.

• If you are worried that the cabbage forcemeat is not sticky enough and the heat will fall apart during the heat treatment, add some breadcrumbs to the forcemeat.

• In order for the zrazy to be well-fried, but not oiled, pour so much oil into the pan that it covers the product by one third.

• Zrazy with cabbage can also be frozen: cooked semi-finished products are laid out on a board covered with cling film and sent to the freezer, as soon as all the components are seized, the zrazy is transferred to a bag or container. They are stored up to 3 months. Before subsequent cooking, they are previously thawed.
