Delicious cod cutlets - general principles of preparation

Delicious cod cutlets are steamed, fried or baked in the oven. Of course, it is easier to fry fish, but believe me, soft, juicy and tasty cod cutlets will appeal to everyone. Again, not all children love fish, and even they will not refuse cutlets.

Minced meat for cutlets is easy to prepare yourself. Cod is a large enough fish, and cutting it up on a fillet is not difficult. The carcass of the fish is washed, the fins and tail are cut off and skinned. The ridge is removed and small bones are removed from the resulting fillet.

Fillet is ground to forcemeat with a meat grinder or blender.

Onions are crushed in a similar way and add it to minced fish. A loaf soaked in milk or water is sent here, after pressing bread slightly.

An egg is driven into the resulting mass, crushed basil and parsley greens are added. Season with salt or black pepper and mix thoroughly.

Minced cod is left for some time and the resulting liquid is drained.

Cutlets are formed from the resulting mass. Then they are fried or baked in the oven, previously breaded in flour or breadcrumbs.

If you cook steaks, you don’t need to pan them.

For a change, you can add cottage cheese, vegetables or oatmeal to the stuffing.

Recipe 1. Delicious Cod Cutlets

Ingredients

600 g cod fillet;

breadcrumbs;

a jar of cod liver;

egg;

30 g parsley;

black pepper;

vegetable oil;

kitchen salt.

Cooking method

1. My cod filet under running water. We dry it with napkins and check for small bones. If any, remove them with tweezers. Cut the fillet into pieces and grind it in a blender until smooth.

2. Open the jar with cod liver and drain the oil. We spread the contents on a plate and knead with a fork. Add cod liver to minced fish.

3. Rinse the parsley, dry and chop finely. Put the greens in the stuffing. All pepper and salt. We constantly try on salt, as the cod liver itself is quite salty.

4. Drive the egg into the minced meat and knead it well. We form round cutlets with wet hands and bread each one in breadcrumbs. Fry the workpiece in hot oil to a delicious crust. We serve cutlets with rice or vegetable side dish.

Recipe 2. Delicious cod cutlets with sauce

Ingredients

Cutlets

a pound of cod filet;

vegetable oil;

100 g of fat;

black pepper;

bulb;

salt;

celery stalk;

egg;

100 g breadcrumbs.

Sauce

50 g of sour cream;

clove of garlic;

half a lemon;

avocado.

Cooking method

1. Wash the cod fillet, dry with napkins and remove small bones, if any. Cut the fillet into pieces and grind it into minced meat in a blender or using a meat grinder. Grind lard, peeled onions and celery in the same way.

2. Add the egg and breadcrumbs to the minced fish. Pepper, salt and knead the minced meat well. Blind enough minced meatballs from the minced meat.

3. Put them in a pan with well-heated oil and fry until golden brown, then turn over, turn down the heat, cover and cook the meatballs for another ten minutes.

4. Grind the garlic with avocado in a blender until a porridge. Squeeze the juice from half the lemon into the mixture and add sour cream. Stir the sauce thoroughly. Serve the patties with a side dish of rice, pouring them with sauce.

Recipe 3. Delicious cod cutlets with cottage cheese

Ingredients

cod fillet - half a kilogram;

lemon;

cottage cheese - 250 g;

breading flour;

bulb;

spices for fish;

egg;

allspice;

parsley, basil and celery;

vegetable oil - a glass;

salt;

white loaf - three slices.

Cooking method

1. Wash the cod fillet under the tap, dry it and remove small bones and skin. Cut the fish into slices, put in a deep bowl and sprinkle with freshly squeezed juice from one lemon. Leave for a while to get rid of the smell of fish. Then grind the cod fillet into minced meat.

2. Cut off the crust from the loaf. Break the crumb and put in a separate bowl. Pour milk into the bread and let it soften. Then squeeze it and add to the minced fish.

3. Peel and finely chop the onion. Pass the onions in well-warmed sunflower oil until golden brown.

4. Cool the onion frying slightly and put in the minced fish. Rinse the greens, dry and chop finely.

5. Rub the cottage cheese through a sieve and add it to the bowl with minced meat. Knead the minced meat thoroughly until smooth. Form oval cutlets from it. Each breaded in flour.

6. Put the patties in a frying pan with heated oil, fry until golden brown, then turn over, pour a little water, cover and simmer over low heat for seven minutes. Serve cod cutlets with fresh vegetables and herbs.

Recipe 4. Delicious cod cutlets in coconut breading

Ingredients

a pound of potatoes;

0.5 kg cod fillet;

olive oil;

50 g butter;

100 g coconut flakes;

75 ml of soy sauce;

100 g breadcrumbs;

2 cloves of garlic;

2 eggs;

50 ml of milk;

half a pod of chili pepper;

5 feathers of green onions;

a small bunch of green cilantro.

Cooking method

1. Boil the peeled potatoes until soft, drain the broth, and crush the vegetable to a puree state and cool.

2. Wash the fish fillet, dry it and pass it through a meat grinder. Combine minced fish with mashed potatoes, add butter and finely chopped green onions. Pour in soy sauce and squeeze peeled garlic. Season with coriander and salt. Knead the minced meat thoroughly.

3. Form round cutlets of small size from minced fish and roll each in flour. Put the blanks on the board and refrigerate for a quarter of an hour.

4. On a plate, mix breadcrumbs and coconut. In a separate bowl, beat the egg with milk. Soak each cutlet in a beaten egg, then roll in a coconut breading. Fry the patties in hot olive oil to a delicious crust.

Recipe 5. Delicious steamed cod cutlets in a slow cooker for a couple

Ingredients

600 g cod fillet;

30 g of corn starch;

a bunch of dill;

egg;

clove of garlic;

60 ml of vegetable oil;

5 g of salt.

Cooking method

1. Wash the cod fillet under the tap, cut it into pieces and wring it out of excess moisture. Put in a blender bowl and chop until smooth. Finely chop the dill and peeled garlic.

2. Add the egg, dill, garlic and starch to the minced fish. Knead the minced meat thoroughly. Blind cutlets out of it. Grease each for drowsiness with oil and put in a container for steaming.

3. Pour half a liter of water into the multicooker bowl. Place a container with cutlets on top, close the lid and activate the “Steam cooking” program. Cook cutlets a quarter of an hour. Serve cutlets with sour cream or garlic sauce.

Recipe 6. Delicious cod cutlets with oatmeal

Ingredients

cod fillet - 700 g;

basil greens and parsley;

bulb;

two eggs;

oatmeal - a glass;

vegetable oil;

salt;

butter - 100 g;

black pepper;

half a lemon.

Cooking method

1. Defrost cod fillet and wash thoroughly. Check for small bones. If they are present, remove them with tweezers. Cut the cod fillet into slices. Chopped peeled onion and cod fillet into a homogeneous mass in a blender.

2. Stuff the minced meat in a suitable dish, and pour half a glass of oatmeal. Salt, pepper, squeeze the juice out of half a lemon and knead the minced meat until smooth.

3. Boil eggs, cool and clean. Chop them into small pieces and add chopped eggs to the minced meat. Knead again.

4. Take a little meat, make a cake out of it, put a piece of butter in the center and form a cutlet so that the butter is inside the cutlet.

5. Grind the remaining flakes in a blender until flour. Pour on a plate and brew each cutlet in them. Fry the cod cutlets until golden brown on both sides. Then wrap each cutlet in parchment, put on a baking sheet and send for 15 minutes in the oven. Serve rice patties with fresh vegetable salad.

Ingredients

cod (fillet) - 300 g;

five lettuce leaves;

olive oil - 100 ml;

sour cream - 50 g;

salt;

flour - 60 g;

potato;

white bread - two slices;

spice;

bulb;

carrot;

spinach - five leaves.

Cooking method

1. Rinse cod fillet well, pat dry with napkins, and select small bones. Cut into small pieces and pass the fillet through a meat grinder.

2. Soak white bread in water or milk. Peel, wash and cut the vegetables into pieces. Squeeze the bread and twist it through a meat grinder along with vegetables. Combine a mixture of vegetables and bread with minced fish.

3. Wash the spinach leaves, finely chop and select the shoots. Add chopped leaves to the minced meat, season with spices, salt and knead it with your hands until smooth.

4. Form the patties, roll them in flour and fry in hot olive oil until golden brown on a small fire. Cover the plate with lettuce leaves and put ready-made cod cutlets on it. For cutlets, you can serve a sauce based on sour cream with herbs and garlic.

Delicious cod cutlets - tricks and tips from experienced chefs

  • To make the patties juicy, add sour cream, pork fat or a couple of celery stalks to the minced meat, chopping everything in a meat grinder.

  • If it seems to you that the minced fish turned out to be liquidish, add more bread to it.

  • Minced meat for cod cutlets can be prepared from several types of fish. It is better to combine cod with oily fish.

  • Add mayonnaise to the minced meat. Cutlets will be softer and tastier.

  • Serve cod cutlets with a vegetable or rice side dish.
