The pig loves a hearty and tasty meal. Therefore, the festive table should be full of food. It doesn’t matter that pork is banned. There are tons of other products that are perfect for the New Year.

New Year's Pig Salad with Chicken

This is not just a salad, but a real table decoration. It contains chicken breast, but you can also use boiled meat from the thighs without skin. Lay the salad in layers on a flat plate.

Ingredients

  • 350 g chicken fillet;
  • 150 g of cheese;
  • 4 eggs;
  • 200 g mayonnaise;
  • 150 g of prunes;
  • 120 g of walnuts;
  • salt, laurel, peppercorns;
  • 2 olives.

Cooking method

  1. Cook the breast. It is important not to overdry. Throw in boiling water, be sure to add laurel, peas of pepper, salt, cook for half an hour. If there is time, then cool in the broth.
  2. Boil the eggs, cool, separate the yolks and rub the whites in different bowls.
  3. Soak prunes in warm water. Fry nuts and chop into crumbs.

Ingredients

  • 600 g of beef;
  • 2 onion heads;
  • 200 ml of red wine;
  • 100 g of flour;

Cooking method

  1. Peel the onions, cut into half rings, fry in oil, transfer to a bowl. We do not remove the frying pan from the stove, add a little more oil.
  2. Beef for this dish can be cut into bars or small medallions. Roll each slice in flour, put in a pan and fry until golden brown over high heat.
  3. Return the onion to the meat, add red wine. Cover, simmer to the absolute softness of beef. On average, the process will take 60-80 minutes.

Jellied of the tongue

  • 5 quail eggs;
  • 1 carrot;
  • 1 onion;
  • 1.5 tablespoons of gelatin;
  • spices, herbs.

Cooking method

  1. Soak the tongue before use in cold water. Then we set to boil, let it boil for 15 minutes, change the water. This is necessary to get a clear broth.
  2. We put the tongue on the stove again, after 20 minutes add the whole onion and peeled carrots. Cook until tender. 10 minutes before the end we salt, we throw laurel, peas of pepper.
  3. The tongue is cooled under a stream of cold water and cleaned. We clean for half an hour in the freezer, and then cut into neat plates.
  4. Boil quail eggs, filter the broth, chop the cooked carrot. You can add any greens to the aspic.
  5. In 100 ml of broth, soak gelatin, after swelling, heat, filter. Then mix with two glasses of broth. We try, we add salt to taste, and pepper.
  6. We put the tongue in the dish, decorate with eggs and other prepared foods. Gently pour the broth with gelatin, try not to shift the ingredients. Remove to solidify in the refrigerator.

You can first pour a little broth with gelatin into the dish, let it harden, and then put the prepared ingredients and the remaining liquid.

Stuffed fish "By pike order"

Stuffed fish looks great on the festive table, especially pike. The recipe for a banquet dish, which is great for a New Year's Eve.

Ingredients

  • 1-1.2 kg of pike;
  • 1 egg
  • 2 slices of loaf;
  • 0.2 lemons;
  • laurel, pepper;
  • 50 ml of milk;
  • 50 g butter;
  • 1 onion.

Cooking method

  1. Cut off the head of the peeled pike, carefully cut the ridge with meat with a sharp knife, turning the skin. It should make a bag. We do it carefully, do not pierce the skin.
  2. Remove the fish flesh from the ridge, pass through a meat grinder with bread and one onion soaked in milk. Add softened butter, spices, stir the minced meat.
  3. We fill the pike skin with the prepared mass. We shift the carcass to a baking sheet with foil, put the head down. Rub with salt, sprinkle with lemon juice.
  4. We lift the foil, pack the fish, leave a small hole for the steam. Pour 3-5 tablespoons of water into it.
  5. Put the fish in the oven for an hour. Then we unfold the foil, let it brown.

Before serving, such a pike is usually painted with patterns of mayonnaise. Just pierce the bag with the sauce, squeeze a thin stream into the dish. We do not use sour cream for this purpose, it will flow.

Potatoes with mushrooms

Potatoes are an ideal side dish for a festive table. Pig loves her, besides the product is yellow. You can make regular mashed potatoes, but baked nests look much more interesting.

Ingredients

  • 12 potatoes;
  • 50 ml of milk;
  • 2 onions;
  • 300 g of champignons;
  • 100 g of sour cream;
  • 2 eggs;
  • 35 ml of oil;
  • 120 g of cheese;
  • 1 carrot;
  • spice.

Cooking method

  1. Peel the potatoes, cut and send to the pan. Fill with water, boil. In the end, salt.
  2. While the vegetable is being prepared, finely chop the onions and carrots. Pour into warmed oil, fry for a minute. Cut mushrooms, add. Cooking vegetables with mushrooms for another ten minutes.
  3. Add sour cream, salt and pepper to the pan, turn off after three minutes.
  4. Drain the water from the boiled potatoes, knead the mashed potatoes, add milk and one beaten egg.
  5. Cover the baking sheet with a rug or parchment. We put the mashed potatoes in a bag or a pastry bag. Squeeze out a round cake on a baking sheet, then make the sides, it should turn out a nest.
  6. We put mushroom stuffing in the nests. Lubricate around with a second egg so that the potatoes are beautifully browned. Sprinkle mushrooms with grated cheese.
  7. Bake the nests for 20-25 minutes at 200 degrees. We focus on color and cheese crust.

Such nests can be prepared and, without mushrooms, use only vegetables or minced chicken, boiled eggs with cheese for the filling.
