Hungarian Appetizer - General Cooking Principles

Lecho is a classic Hungarian appetizer, the recipes of which are incredible. In addition to pepper, carrots, zucchini, eggplant and even lard are added to it. Below is a couple of interesting recipes. Also in Hungarian cottage cheese is very much appreciated. It is actively used, but more often in salt form.

Hungarian snacks tend to add a lot of spices. In honor not only fresh peppers, but also ground paprika. Very often they are combined in one dish, which allows you to get rich tastes. Actively used garlic, black pepper, cloves and all kinds of greens.

Hungarian appetizer with bell pepper and carrots

A variant of the Hungarian lecho. In addition to bell peppers, other vegetables, such as carrots, are present in this appetizer. If there is no lard, then you can use another type of fat or just butter.

Ingredients

• 3 kg of pepper;

• 1 head of garlic;

• 100 grams of fat;

• 4 onion heads;

• kilogram of tomatoes;

• 3 tablespoons of wine vinegar;

• four carrots;

• a spoon of salt;

• four tablespoons of sugar;

• paprika, black pepper.

Cooking

1. To prepare a snack you need a large stewpan or cauldron. If there is nothing like this, then take a pan with a thick bottom or fry the first vegetables in a pan, then shift.

2. Cut the fat into pieces, toss and fry the bunker for the appearance of cracklings. Remove them carefully.

3. Cut the onion into strips, put in fat, fry until transparent.

4. Peel the carrots and grate coarsely straws, as for Korean salads. Transfer to onion, fry together. Usually they add a spoonful of paprika to them, which can also be done.

5. Cut the pepper in half, remove the seeds, then cut each part in length for another 3-5 parts to make large strips. Pour pepper to vegetables, stir and warm for two minutes.

6. Prescription tomatoes are laid whole, but can be cut. Also, sometimes the skin is removed from the tomatoes, which is optional. Just add, cover the dish and simmer everything together for half an hour.

7. Add wine vinegar to the Hungarian appetizer, salt, be sure to pour sugar, which will enhance the taste.

8. Peel a large head of garlic, chop and also lay at this stage. Mix everything thoroughly, simmer the lecho for another 5-7 minutes and you're done!

Hungarian appetizer with zucchini and pepper for the winter

A variant of a delicious Hungarian preparation for the winter based on Lecho, which perfectly combines pieces of pepper and zucchini. For cooking, you can use red or yellow pepper, it is better not to take green pods, as they give the workpiece a little bitterness.

Ingredients

• 1.5 kg of ripe tomatoes;

• 3 cloves of garlic;

• 70 ml of oil;

• 500 g squash;

• 200 g of onion;

• 800 grams of pepper;

• 5 peas of pepper;

• a spoon of salt;

• a couple of spoons of sugar;

• bitter pepper (one middle pod);

• 2 tbsp. l vinegar

• 3 cloves.

Cooking

1. First make tomato sauce. To do this, cut into pieces the tomatoes, transfer to a pan, cover and send to the stove. Stew in its juice for twenty minutes, then mashed with a blender. Or immediately twist through a meat grinder, put on a stove and cook for the same amount of time, but keep the lid closed so that the juice does not boil away.

2. Cut the onion into cubes, lightly fry, do not let the pieces burn. Often it is thrown in raw form, this can also be done, but after frying the lecho will have a pleasant aroma.

3. We shift the onions into tomato sauce.

4. Cut the pepper into wide strips, discard the cores with seeds. Pour into the pan.

5. Zucchini cut into slices and also add.

6. Grind the garlic and pod of hot pepper, toss into the total mass.

7. Immediately put the salt and sugar, toss the pepper with peas, mix everything thoroughly, cover and cook for twenty minutes.

8. At the end, we throw cloves, vinegar, stir, be sure to taste and, if necessary, put more spices.

9. Boil a minute with vinegar and immediately pour into sterile jars, quickly roll up and turn the workpiece up to the neck. In this form, we keep the Hungarian snack until it cools completely, then you can put it in storage.

Hungarian zucchini snack

This is not a preparation for the winter, but just a very tasty vegetable appetizer in the Hungarian style. According to the recipe, sour cream is added to it, the fat content of which you can choose at your discretion. If you do not want to weight the appetizer, then you can replace the sour cream with Greek white yogurt.

Ingredients

• 2 zucchini;

• 150 grams of sour cream;

• one pepper;

• 2 tomatoes;

• 2 onions;

• 2 cloves of garlic;

• 0.5 tablespoons of ground paprika;

• a spoon of flour;

• 50 grams of oil;

• parsley and spices.

Cooking

1. Pour oil into a frying pan, send to the stove, let it heat.

2. Peel and quickly chop the onions, pour over the heated oil, fry for about two minutes. Then pour paprika to it, stir, warm for 10 seconds.

3. Dice the bell pepper, pour over the onion, pour 50 ml of hot water and simmer. All water should evaporate.

4. Cut the zucchini into cubes, transfer to a skillet, fry with other vegetables for about five minutes. The pieces should not fall apart, let them remain a little tough.

5. Cut ripe tomatoes into small pieces, shift to other vegetables, stir and simmer the dish until almost ready.

6. Mix a spoonful of plain flour with sour cream, grind thoroughly so that there are no lumps, pour into a skillet.

7. Immediately salt, pepper, add garlic cloves, pre-chopped.

8. Warm up a snack for a couple of minutes, turn off the heat, season with fresh parsley. Serve hot, like stew, or cool.

Hungarian appetizer "Scooter"

A variant of a bright snack, it is advisable to use large and colorful peppers. It is quite sharp, with spices and mustard. At the heart of fat cottage cheese.

Ingredients

• 500 g of cottage cheese 18%;

• 4 cloves of garlic;

• four peppers;

• 3 tbsp. l sour cream;

• a spoon of paprika;

• 0.5 tsp ground red pepper;

• 0.5 tsp mustard;

• 0.5 onions;

• 0.5 bunch of dill;

• 1 tsp cumin seeds.

Cooking

1. Rub the cottage cheese with a spoon or knead with a fork, transfer to a bowl.

2. On the smallest grater chop the half of the onion, with it you can immediately grate the peeled cloves of garlic.

3. Chop greens, add to the total mass.

4. Combine sour cream with mustard, add salt, hot pepper to them, put paprika, caraway seeds, and grind thoroughly until smooth. If this is not done, then in the cottage cheese evenly distribute the hot spices will be more difficult.

5. Transfer the sour cream to the total mass, mix thoroughly.

6. Carefully cut the stalks of the peppers, take out the seeds, remove all the leaves.

7. Stuff the peppers thoroughly with cooked cottage cheese, remove for a couple of hours in the refrigerator.

8. When serving, peppers need to be cut across the washers, and spread out nicely.

Hungarian Appetizer: Egg Pate Sandwiches

The recipe for a simple snack, which can be prepared for breakfast or for the arrival of guests. You can add various spices to the egg paste at your discretion.

Ingredients

• 4 eggs;

• 50 grams of drain oil .;

• 50 g of nuts;

• 4 radishes;

• fresh cucumber.

Cooking

1. Onion cut into cubes, fry in butter until transparent, add crushed garlic, warm together until soft.

2. Fry nuts until golden brown in vegetable oil.

3. Boil eggs, peel, cut into pieces.

4. Combine onions in a bowl, add nuts, eggs, sprinkle spices and mashed together with a blender.

5. Cut the baguette, grease with egg paste. You can dry the slices of the loaf first.

6. Cut the radishes and fresh cucumber into rings, decorate the appetizer. You can use other vegetables, herbs for this purpose.

Hungarian snack "Curd Gombovtsy"

An appetizer option, which is a boiled curd balls. They can be served with hot sauces or with sweet jam, condensed milk.

Ingredients

• 500 g of cottage cheese;

• two eggs;

• 5 spoons of semolina;

• 10 g sugar;

• a pinch of salt;

• 30 g butter;

• 3 tbsp. l flour;

• 4-5 tablespoons of crackers.

Cooking

1. Mix the mashed cottage cheese, add eggs, salt and sugar to them, mix thoroughly. For the salty version, you can introduce a clove of garlic.

2. At the end, pour semolina, flour, re-stir and leave the dough for ten minutes.

3. Wet small balls with wet hands, diameter not more than four centimeters.

4. Boil water, salt, throw the balls, gently stir with a slotted spoon and boil for 5 minutes after surfacing.

5. Remove with a slotted spoon, shake off all drops.

6. Melt the butter, add crackers, fry until a pleasant aroma.

7. Roll warm balls in fried crackers.

Hungarian appetizer - useful tips and tricks

• Now pink and yellow tomatoes are very popular, but the tomato juice from them turns pale and ugly. You can correct the color with the help of boiled chopped beets, it can be added to the lecho. Do not use the root crop in its raw form, it will turn brown.

• Sterilizing cans is not always a time-consuming process. There are tons of easy ways. For example, pour some water and put the cans in the microwave, warm for 5-7 minutes, pour the water. Or bake cans in the oven on a baking sheet.

• Garlic is not always easy to peel; it can be very difficult to peel dry husk. But you can soak the cloves in cold water, the process will go much faster.
