• Muffins are baked in small molds, which can be made of either silicone or metal. Often for such baking, paper molds specially manufactured by the factory are used. Before distributing the dough into forms, vegetable oil is applied in a thin layer on their walls and bottom, containers made of silicone do not require such preparation.

• Muffin dough with apples is kneaded on milk or dairy products, such as sour cream, kefir and even cottage cheese. It is always loosened with a factory cultivator. The peculiarity of preparing dough for muffins is that it can not be stirred for a long time, and even more so, whipped. Baked products should be with large pores, and long kneading and whipping makes the structure finely porous.

• Apples in crushed form can be added both to the dough itself and to the filling. To grind fruit, you may need a grater with large or small cells.

Ingredients:

• granulated sugar - 100 g .;

• three eggs;

• 100-120 gr. high-quality flour;

• large ripe apple;

• 50 gr. homemade butter;

• 400 gr. low-fat cottage cheese;

• factory cultivator - 1/4 tsp.

Cooking method:

1. Pour the eggs into the cottage cheese, add sugar and beat in a blender until pasty.

2. Grate the oil with a coarse grater, add flour, about three tablespoons, again mix with a blender until a homogeneous consistency.

3. Peel and peel the apple with a coarse grater. Add apple chips to the dough and mix well, but with a spoon.

4. Pouring flour, adjust the density of the curd mass. It should be a little thicker than you usually do for fritters. The consistency is slightly thicker than the still not frozen home-made sour cream.

5. Arrange the curd paste in small silicone cupcake tins. If you use metal or disposable paper - be sure to moisten with vegetable oil.

Ingredients:

• two large apples;

• egg;

• skim milk - 125 ml;

• low-fat cottage cheese - 200 gr.;

• flakes "Hercules" - 150 gr.;

• vanilla or cinnamon powder, fructose - to taste;

• 3 gr. factory baking powder dough.

Cooking method:

1. Pour cereals with hot milk and leave for a while, so that they are well steamed.

2. Rub the peeled apples into the swollen and cooled oatmeal with a coarse grater. Add cottage cheese, ripper and fructose. For flavor, put some cinnamon or vanilla powder, mix.

3. Constantly stirring the oat dough, gradually introduce all the fiber into it.

4. Spread the cooked dough evenly over small tins and place them in a heated oven.

5. Bake diet muffins should be no more than 40 minutes, constantly monitoring the temperature regime. The optimum temperature is 180 degrees, with a higher product they will not bake or rise.

Muffins with apples and walnuts on kefir

Ingredients:

• high-quality flour - 300 gr.;

• 60 ml of high-quality lean vegetable oil;

• egg;

• a spoonful of vanilla extract;

• 60 gr. nut kernels;

• 100 gr. white refined sugar;

• 300 ml of fat yogurt;

• two spoons of the cultivator;

• 0.5 tablespoons of fine salt;

• 0.5 tbsp. l brown sugar;

• cinnamon powder - 0.5 tbsp. l .;

• apples - 3 pcs. small size.

Cooking method:

1. Cut the apples in half. Peel, remove core residues and cut into small cubes. Finely chop walnut kernels.

2. In a warm, aged at room temperature, kefir, break the egg. Pour in the oil, vanilla extract and mix well. Liquid flavoring can be replaced with powder or vanilla sugar. In this case, it will need to be introduced not into kefir, but mixed with loose components.

3. In a separate bowl, transfer the flour. Pour salt, baking powder, white sugar to it. Mix the bulk ingredients well and pour them into the kefir mixture. Intensively mixing, bring the mass to uniformity. Do not whisk, otherwise the baking will not rise.

4. Add nuts with chopped apples, mix the dough well and immediately arrange it in prepared tins.

Chocolate Muffins with Apples

Ingredients:

• apples - 350 gr.;

• dark cocoa powder - 4 tbsp. l .;

• 75 ml of refined corn oil;

• 150 ml of pasteurized low-fat milk;

• egg;

• filtered juice from a small lemon;

• 100 gr. sugar

• factory cultivator - 2 tsp;

• wheat flour - 200 gr.

For shtrezel:

• 30 gr. thickened cream;

• 50 gr. high-quality flour;

• a tablespoon of sugar.

Cooking method:

1. Without peeling, cut the apples into small cubes. It is desirable that the size of the pieces does not exceed 7 mm. So that the pieces do not darken while you prepare the remaining components of the muffin, sprinkle them with lemon juice and mix.

2. In a large bowl, combine the warm milk with the eggs. Add granulated sugar and stir to dissolve its grains.

3. In a separate bowl, mix the flour with cocoa, pour the cultivator and pass the mixture through a sieve into a container with a liquid base. Bring to uniformity and mix crushed apples into the dough.

4. Cut the butter medium-sized, put the pieces in a small bowl and leave them to soften slightly. Then add granulated sugar, add flour and mash thoroughly with a fork until fine crumbs are formed. You can rub it intensively with your hands.

5. Fill the molds prepared for baking into two-thirds of the volume, sprinkle on top with a shtrezel prepared by buttery crumbs, and place for 25 minutes in a well-heated oven.

Carrot Muffins with Apples - Solar

Ingredients:

• cashew nuts - 50 gr.;

• wheat flour - 150 gr.;

• a tablespoon of cinnamon pounded in a mortar;

• eggs - 2 pcs.;

• 80 ml of lean frozen oil;

• 10 gr. factory cultivator;

• 140 gr. sugar

• sour apples - 125 gr.;

• 50 gr. dark raisins;

• 25 gr. coconut flakes;

• 120 gr. juicy carrots.

Cooking method:

1. Transfer the flour with a fine sieve. Add a small pinch of salt, cinnamon, pour in a cultivator and reseed so that all the components mix evenly.

2. In a separate bowl, break the eggs and, without ceasing to beat, introduce all the sugar into them. Then pour oil into the sweet mass and mix well.

3. Grate peeled carrots and apples with a large vegetable grater, mix and leave for five minutes. Then strain the juice that has stood out, and send the carrots with apples to the eggs.

4. Add coconut and finely chopped nuts. Pour in the sifted flour and stir again.

5. Arrange the cooked carrot and apple dough in tins and bake at 180 degrees.

6. The cooking time depends on the type of oven, so after twenty minutes it is advisable to check the muffin's readiness by piercing a wooden stick in the center.

Muffins with apples under creamy glaze

Ingredients:

• large apple;

• three eggs;

• 200 gr. high fat sour cream;

• 150 gr. refined sugar;

• a full teaspoon of factory cultivator;

• crystalline vanillin - 1 tsp;

• 250 gr. premium wheat flour.

For glaze:

• cream, medium fat - 100 ml;

• 20 gr. high-quality butter;

• 100 gr. sugar

• 1/3 spoonful of vanilla powder.

Cooking method:

1. Break the eggs into a bowl, add regular sugar, add vanilla, beat thoroughly.

2. Put sour cream in the egg mixture, pour in the seeded cultivator with flour and, with a spoon or whisk, stir so that there are no lumps. Do not beat the dough.

3. Coarsely grate the apples, sprinkle them with lemon juice, mix and temporarily set aside.

4. Pour the cooked sour cream dough into molds. Do not pour a lot, just fill in one third. Then put some apple chips and add the molds to two thirds of the volume with the dough.

5. Place the completed forms on a baking sheet, stepping a little apart, and bake for 25 minutes. The temperature in the oven is 180 degrees, not more. Then remove and cool, freeing from forms. To prevent the bottom of the baking dish from being wet, place the muffins on the wire rack.

6. Combine the cream with granulated sugar, vanilla and place on a stove to boil, but do not boil. As soon as the first bubbles begin to rise to the surface, reduce the heat and continue cooking for 20 minutes, constantly stirring at the same time. Then remove the creamy mixture from the heat, lower the butter and stir until completely dissolved. After this, pour the glaze into another dish and cool well, but not quite, it should be a little warm.

7. Apply a thin layer of creamy glaze to the surface of the cooled muffins and leave to harden. You can sprinkle a layer of glaze with colored powder.

• Do not knead the dough for muffins for a long time. For the ripper to disperse well, mix it with flour before sieving. Also add flour and other finely ground ingredients - like cocoa, cinnamon or vanilla powder.
